These Healthy Cosmic Brownies deliver all the nostalgia of the lunchbox favorite, but with simple, wholesome ingredients, less refined sugar, and a rich fudgy texture. Dates, almond butter, and cocoa powder create a naturally sweet brownie base, while a silky chocolate topping and naturally colored sprinkles give them that classic "cosmic" look. Inspired by healthier versions that use dates and whole-food ingredients instead of refined sugar and processed oils.
Healthy Cosmic Brownies Recipe

Ingredients
For the Brownies
1 cup pitted Medjool dates, soaked in warm water for 10 minutes
½ cup natural almond butter
2 large eggs
1 tsp vanilla extract
⅓ cup unsweetened cocoa powder
½ cup oat flour
¼ tsp sea salt
½ tsp baking powder
¼ cup dark chocolate chips
You COULD use a healthy boxed brownie mix to save time! (Tips on that are below)
For the Frosting
½ cup dark chocolate chips
2 tbsp almond milk
1 tbsp almond butter
You also COULD buy a healthier fudge icing alternative
For the Cosmic Topping
2 tbsp naturally colored rainbow sprinkles or candy-coated chips
Instructions
Preheat oven to 350°F and line an 8x8-inch baking pan with parchment paper.
Drain the soaked dates and blend with almond butter, eggs, and vanilla until smooth.
Add cocoa powder, oat flour, salt, and baking powder. Blend again until fully combined.
Fold in the dark chocolate chips.
Spread batter evenly into the prepared pan.
Bake for 18–22 minutes, until the center is set but still pretty fudgy (this is key)
Cool completely. Refrigerate or freeze for about 20 minutes.
For the frosting, melt the chocolate chips with almond milk and almond butter until smooth.
Spread frosting over cooled brownies.
Sprinkle with rainbow toppings!
Notes
For a dairy-free version, use dairy-free chocolate chips.
Store in an airtight container in the refrigerator for up to 5 days.
Freeze individually wrapped brownies for up to 3 months.
If you go the box route, replace the water with milk, the oil with melted butter, add one extra egg yolk and a teaspoon of vanilla, then top with the homemade chocolate frosting and rainbow sprinkles for an easy Cosmic Brownie-inspired treat😏
