Dark Chocolate Peanut Butter Fig + Date Bark

Sweet, salty, chewy, and clean.

This Dark Chocolate Peanut Butter Fig + Date Bark is made with a base of naturally sweet dates and fresh figs, topped with dark chocolate peanut butter and a sprinkle of hemp seeds. It takes just a few minutes to put together, requires zero baking, and turns into the perfect little fridge treat.

The dates give it that chewy, caramel-like base, while fresh figs add another layer of sweetness and texture. Dark chocolate peanut butter makes it feel like dessert, and hemp seeds add a subtle nutty finish.

It’s exactly what the Clean Plates Project is about: real ingredients, minimal effort, and food that actually tastes good.

Ingredients

  • 8–10 Medjool dates, pitted

  • 2–3 fresh figs

  • 2–3 tablespoons dark chocolate peanut butter

  • 1–2 teaspoons hemp seeds

  • Flaky sea salt, optional

Instructions

1. Make the date base. Place the pitted dates close together on a sheet of parchment paper. Add another piece of parchment on top and use a rolling pin or the bottom of a glass to press and roll the dates into one thin, connected layer.

2. Add the figs. Slice or tear the fresh figs over the date layer. Use a fork to gently smash them into the dates, spreading them across the surface.

3. Drizzle. Warm the dark chocolate peanut butter for a few seconds if needed so it’s easy to drizzle. Spoon or drizzle it generously over the fig and date layer.

4. Finish it. Sprinkle with anything you’d like. I chose hemp seeds to add some protein and minerals. If you love that sweet-salty combination, a tiny pinch of flaky sea salt or some pistachios!

5. Chill. Transfer to the refrigerator until everything is cold and set, about 30–60 minutes.

6. Break + eat. Cut or pull the bark into pieces and enjoy straight from the fridge.

Notes

Make it extra chocolatey: Add a drizzle of melted dark chocolate over the peanut butter before chilling.

Add crunch: Sprinkle chopped pistachios, almonds, or cacao nibs on top.

Keep it simple: Dates, figs, peanut butter, and hemp seeds are plenty—the combination already brings sweetness, richness, chew, and a little nuttiness without needing much else.

Storage: Keep the bark in an airtight container in the refrigerator. Because it contains fresh figs, it’s best enjoyed within a few days.

Why I Love It

I’m always looking for snacks that sit somewhere between something sweet and something that actually leaves me satisfied. This one does both.

Dates and figs bring plenty of natural sweetness, peanut butter adds richness, and hemp seeds round everything out with a little texture and staying power. It feels indulgent without turning into a complicated “healthy dessert” with 17 ingredients.

Real food. Really good.
